おいしさの基本は素材。たとえば、信州は山の国、土の国。そもそも土のちからが強い。そこで育ったお野菜には自然なうまみが凝縮されています。せっかく、その恵まれた素材が新鮮なまま手に入る環境にいるのだから、そのパワーを100%引き出すためには、使う調味料にも吟味が必要です。
ただし、手間ひまかけて丁寧につくられた調味料は、正直お安くはありません。
でも、素朴でまっすぐな食材には、昔ながらの製法でつくられた自然のお塩、お醤油、お酢、お味噌などがスッとなじむ。だから私たちは、足し算の味付けではなく、素材に染みこみ、うまみを導き引き出す、おいしさのガイドのような調味料だけを選んでいます。

A low price often equals a low-quality flavor. While we don’t believe expensive automatically means better, products made with authentic, carefully selected ingredients and dedicated, time-honored processes naturally come at a certain cost.

取り扱っているナチュラルワインはどれも生産者がわが子を育てるように手塩にかけた一雫です。だから少量しかご用意がなく、そこそこのお値段がします。繊細で、一見変わり者のような佇まいを見せることもありますが、心を開いて素直に受け入れてあげると、その天真爛漫な個性で飲み手を魅了してくれます。無邪気で素直、繊細で可憐。そんなハートを持った子供たちに寄り添うために、お料理も飾らず、気どらず、シンプルで、味付けは基本薄味になります。
The natural wines we offer are all unique drops, nurtured by their producers with the same care and love as they would give to their own children. For this reason, we have only a small quantity of each, and their price is not inexpensive. These wines can be delicate and may seem a bit quirky at first, but if you open your heart and accept them, their true, innocent character will charm you. To complement these sincere and delicate wines, our food is served without frills. It is simple and unpretentious, with a basic light seasoning.

また基本6つのテーブルしかない小さなレストランですが、一人でも多くのお客様にご提供できるよう努めて参ります。
